Looking for surprising and creative cuisine? At Specto, the complicity between the manager and his chef, and their attention to detail, are evident not only in the atmosphere but also on the plate.

Nestled in G.A.N.G, the new food court in the Belle Etoile shopping centre, Specto opened at the beginning of September and has already made a name for itself. The bistronomic restaurant, owned by Stéphanie Jauquet and managed by Thomas Dessy, has already won Gault&Millau's 'Discovery of the Year' award.

As soon as you enter the restaurant, the decor catches the eye. Red, green, white and black are everywhere, from the banquettes and counter to the crockery. It's a refined atmosphere, but without the fuss - and it works!

Everything is done to put customers at ease. While the lunchtime service attracts a business clientele looking for a quick lunch served at the table or counter, in the evening the atmosphere is more subdued. Families can sit in one of the alcoves and enjoy a tasty moment in complete privacy.

Innovative and tasty cuisine

At Specto, the real show is on the plate! Chef Morris Clip has retained his childlike spirit and continues to innovate, delighting gourmets with his warm and sophisticated cuisine. To concoct dishes that are as beautiful as they are good, he draws inspiration from his experiences and the trends he observes around him, which he likes to reinterpret in his own way.

As he likes to say, "Mother Nature decides". There's no question of settling into monotony for the man who doesn't hesitate to change the menu. "fresh idyll", "frit style", "fire intense", "wok d'ailleurs" and "sweet dénouement", the categories of dishes have something for every palate. Both the presentation and the flavours are pleasantly surprising, thanks to the chef's use of a charcoal oven.

At Specto, you won't find a traditional menu consisting of a starter, main course and dessert, but rather a range of dishes to suit all tastes and appetites. Feeling a little thirsty? Here wine is served by the bottle or by the glass from the 160 references in the wine cellar. Those who like a little bubbly can indulge in a glass of champagne or crémant!

The lunchtime menu is a great way to immerse yourself in the chef's cuisine. Comprising three savoury dishes (based on meat or fish) and one sweet dish per person, for €35, it offers everyone a real experience.

The sea bream with ginger juice, radishes and red tobiko is light and fresh. The perfect way to whet your appetite! Served in a cassolette, the veal paupiette with beer, ginger and farmhouse bacon will warm the hearts of those who love home cooking. To finish on a sweet and tangy note, we recommend the lemon graffiti. A real treat for the taste buds!
