Le Fin Gourmand
In this restaurant, which lends itself well to business lunches, you can ask for white asparagus and mousseline sauce, with a choice of extras: smoked salmon or Pata Negra. It can be served as a starter or a main course. A classic recipe, but one that always works.

L’Hêtre Beim Musée
In this restaurant, which adjoins the Lëtzebuerg City Museum, there are several suggestions based around asparagus. Chef Mathieu Morvan has created a dish featuring green French asparagus with Luxembourg burrata, a crunchy condiment and homemade granola. For vegans, there’s also pan-fried asparagus with red berries, served with a vegetable sauce with fresh herbs and fried polenta. It’s also available as a starter on the “Discovery Menu”: white asparagus served warm with marinated salmon and a tangy vinaigrette. Alternatively, green asparagus is also served as a side dish with roast loin of veal or seared octopus. Very nice terrace.

Le Laboratoire
A little off the busy paths of the Gare district, in his restaurant at the entrance to the Bonnevoie neighbourhood, chef Benoît Gonella offers a dish of white asparagus and morel mushrooms, with a hazelnut crumble. For those who prefer a heartier version, it is also possible to order a giant ravioli with two asparagus, accompanied by an emulsion of farmhouse bacon.

Porta Vecchia
At this restaurant in Sennigerberg, asparagus from the Freilandkultur Grunhofer farm in Zewen takes centre stage. It can be served with a choice of accompaniments: simply with hollandaise sauce, or with Parma ham, smoked salmon, salmon fillet, breaded veal escalope, beef fillet... There’s also the “Triple A salad” (asparagus, avocado, artichoke), asparagus velouté or asparagus ravioli and penne with asparagus and scampi. There really is something for everyone. And the more adventurous can even try a pizza with asparagus and Burgundy snails!

B13
In the very bright pavilion on Place de Bertrange, B13 currently offers two dishes featuring asparagus. One has white asparagus, accompanied by a strawberry vinaigrette, feta mousse and toasted almonds; the other puts green asparagus into the spotlight, served with tagliatelle, peas and pancetta. Weather-permitting, book a spot on the lovely terrace to enjoy your food.

Bistro Quai
Chef Joël Schaeffer makes it a point of honour to work with fresh, seasonal produce. So it’s hardly surprising that there are a number of asparagus dishes on the menu at the moment. Let’s start with this week’s dish of the day, a quiche with asparagus, comté cheese and mesclun salad. From the Q menu: asparagus velouté with duck effiloché as a starter. À la carte: asparagus velouté and poached egg with chive whipped cream (as a starter), or main dishes of white asparagus, served with either gravlax salmon or cured ham with sautéed potatoes.
